Halliday Wine Companion 2016 Results…

August 3rd, 2015

Hi Everyone,

We are so pleased with our results in the latest Halliday Wine Companion Guide. Please see below;

Guillotines Shiraz 2013 – 92 POINTS

Slightly reductive, but good value drinking. Plum, charcoal and spice, fresh and modern, with enough power to satisfy without being heavy of syrupy.

The Box Tempranillo 2013 – 92 POINTS

Open-fermented, 25% matured in new American oak for 1 year before blending with the stainless steel component. Purpe-crimson the wine enters the mouth with a blast of red cherry fruit and vanillan oak, finishing with powdery tannins.

Lefthanders Sauvignon Blanc Semillon 2014 – 91 POINTS

Plenty of fruit around its belly but it still manages to cut a fine figure. Lemongrass, gravel and tropical fruit with a textual element and good push of flavour towards and through the finish.

Honeycombs Chardonnay 2014 – 90 POINTS

Night harvesting and cold-pressed clear juice fermented in French oak results in a fresh, fruit-driven style with white peach and melon flavours to the fore.

Bears Cabernet Merlot 2013 – 89 POINTS

To purchase any of these wines, please call us on (08) 9368 4555 or go to our online store.

Everyone get excited as we have some SUPER exciting news…

We will be releasing our first EVER, Bunkers ‘Supertubes’ Pinot Grigio. ‘There is no more magical sound than the songs of Supertubes. The hum of perfectly formed barrels off Smith’s beach has lured many. If the call is too loud, luckily Pinot Grigio pairs perfectly with a sun chair and ice bucket.’

We are beyond excited to release our ‘Supertubes’ Pinot Grigio on 1st August 2015. This crisp, refreshing style with great length of flavour is sure to knock your socks off!

NEW RELEASE…Bunkers Rose!!!

May 5th, 2015

Hi Everyone,

Just a little update on the new release BUNKERS ROSE 2015!

We have made the 2015 Bunkers Rose in much the same way as previously. That is, we pick during the night to have the fruit as cold as we can and then let it sit cold and crushed in the press for a few hours.

Since the wine is a Shiraz and Tempranillo blend and both varieties ripen at different times, it means of course, it takes a bit of judgement to get the level of skin contact right. Its a matter of time and temperature and the nature of the variety, how much colour (the degree and intensity)  it has in the skins and how easily you can extract that colour. Too high a temperature and you get plenty of colour over a short time, but you lose the delicacy of flavour and texture that you want.

Shiraz can be a vibrant purple, whereas Tempranillo has a slightly more pink/orange hue to its colour and has tougher skins. The upshot is and I hope you all agree, that this year we have a lovely delicate and savoury style that will sit well on a Friday afternoon, or even Monday morning if you think it helps.

The colour is a nice vibrant violet / pink with some nice lifted berry aromas, quite complex. The palate is fine, perhaps the finest (i.e. in length and delicacy) that we have made so it works well in most situations and can easily substitute for a white as necessary. Its dry so there’s no cloying sensation to ruin the moment of time and place.

I hope you will all enjoy it!

***Vintage Update***

March 10th, 2015

Well no two vintages are ever the same but probably compared to other regions Margaret River is pretty consistent with no wild swings in growing conditions from year to year…except for this vintage!

Vintage really starts around November , not November just gone but the one before in 2013 when most of the fruitfulness of this vintage is determined in the lateral buds of the shoots. Then there are the stresses and strains on the vine throughout vintage 2014, the water and nutrient status as the vines senesce and they head into winter dormancy. During which time we all peer down our microscopes looking for healthy little flowering bodies in the dormant buds and working out a plan of attack for pruning that will hopefully leave just enough buds in the right positions to give us a healthy balanced vine and crop!

Here are some photos below…
